Apple Cinnamon Baked Oatmeal Cups

You only need a handful of simple ingredients to make these cups. They’re lightly sweetened, soft and chewy, and filled with apple cinnamon flavor in every bite!

Yield: 12 muffin-sized cups

 

Ingredients

    • 1 Honeycrisp apple, diced into ¼ inch cubes (about 2½ cups)
    • 2 Tbsp flax meal
    • 5 Tbsp warm water
    • ¾ cup unsweetened applesauce
    • ⅓ cup maple syrup
    • 2 cups unsweetened soy milk
    • 1 tsp vanilla extract
    • 3 cups old fashioned rolled oats
    • 1½ tsp ground cinnamon
    • ¼ tsp ground ginger
    • ¼ tsp ground nutmeg
    • ¼ tsp salt
    • 1 tsp baking powder
 

Directions

    1. Preheat oven to 350º F. Lightly grease a muffin tin with oil or line with paper or reusable liners.
    2. Whisk together flax meal and warm water to make flax egg. Set aside until a gel-like consistency forms.
    3. Add flax egg to a large mixing bowl with applesauce, maple syrup, soy milk, and vanilla extract. Stir to combine.
    4. Add dry ingredients to wet and stir, then fold in apple cubes.
    5. Fill each muffin cup to the top, about ⅓ to ½ cup of batter. There should be enough batter for 12 cups.
    6. Bake for 25-30 minutes, until the tops are browning and a toothpick inserted in the center comes out clean.
    7. Allow to cool slightly, then run a butterknife around the edge of each cup to release from pan.
    8. Enjoy immediately or store in an airtight container in the fridge for up to 5 days!
